A Cool Treat with a Story Behind It
Old Village Shaved Ice began in 2020 with a simple idea: create something fun, memorable, and different. At just 10 years old, inspired by a family trip to Japan in 2016, founder Elias Gilmore wanted to bring the joy of shaved ice - or kakigori, as it is known in Japan - to the Lowcountry in a way that stood out from the usual lemonade stand.
What began with a shaved ice machine from Goodwill and a foldout table gradually grew through hard work, creativity, and determination. A year later, the business evolved into a refurbished cargo bike setup that became a distinctive and recognizable part of Old Village Shaved Ice.
Now, at 16, Elias is guiding OVSI into its next phase. In addition to the cargo bike that helped define the business, OVSI is expanding into a Subaru Sambar Classic kei van imported from Japan and thoughtfully converted for serving shaved ice. It is an exciting new step that reflects how far the business has come while staying true to the same spirit that inspired it from the beginning: refreshing treats, personal service, and a memorable experience.
Part of what makes Old Village Shaved Ice different is the quality of the shaved ice itself. Using a Japanese shaved ice machine, we create a texture that is lighter, finer, and closer to authentic kakigōri than the typical American-style shaved ice. The result is a smoother, more delicate, and more refreshing treat.
Alongside our shaved ice, we offer a variety of flavors as well as Lowcountry merchandise and artwork through our online shop. We also remain committed to making thoughtful choices for the future, including eco-friendly cups and spoons, rechargeable battery power, and a continued focus on reducing our environmental footprint in the Lowcountry and beyond.
Old Village Shaved Ice is built on the idea that small businesses can be creative, hardworking, and community-minded all at once — and we are excited for what comes next.
